Khatta Dhokla is originally from Gujrat in West India. Khatta Dhokla is a steamed preparation made from batter of Rice & Udad Dal with a tangy sour taste. Eaten as breakfast, along with meals or as a snack… Mother’s Recipe brings “Instant Khatta Dhokla Mix” a traditional recipe made from choicest ingredients.
Ingredients: Rice Flour, Bengal Gram Flour (Udad Dal), Semolina, Wheat Flour, Sugar Powder, Edible Common Salt, Acidity Regulators (INS 330 & INS 262(ii)), Raising Agent (INS 500(ii)) and Asafoetida.
Cooking Instructions:
Step 1 – In a bowl take 1 cup (200 ml) water, 2 tbsp oil (25 ml), 3 tbsp fresh or sour yoghurt (dahi). Mix well and keep aside. Add Khatta Dhokla mix gradually.
Step 2 – Blend gently for 1 minute until batter is smooth .Grease 2 baking trays with oil. Pour equal quantities of batter into each and sprinkle some black pepper powder & red chilli powder.
Step 3 – Steam on high flame for 12 minutes. If pressure cooker is used do not apply weight/whistle. Remove & allow to cool for 5 – 7 minutes. Cut into 4 – 5 cm cubes or wedges.
Mother’s tip – If desired add vaghar – heat 2-3 tbsp oil, add 1 tsp mustard seeds, when mustard crackles put off gas & add a pinch of hing. Mix and spread evenly on Khatta dhokla pieces. For added taste add 2 tsp Ginger green chilli paste in batter. Garnish with chopped Green Coriander leaves.
Serving Suggestion: Serve with Green Coriander chutney.
